Ingredients

1 litre(s)

Chilled Pea & Yoghurt Soup

  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 450 grams water
  • 450 grams frozen peas
  • 1/2 brown onion
  • 1 clove garlic
  • 300 grams Greek or natural yoghurt
  • 5 - 6 mint leaves torn
  • 1/2 tsp lemon zest

Recipe's preparation

    Chilled Pea & Yoghurt Soup
  1. Add stock, onion and garlic to the TM and cook 100 C / 5 minutes / speed 1

    Add peas and continue cooking 100 C / 5 minutes / Speed 1

    Blitz into a smooth soup 10 seconds  / speed 9

    Allow to cool and then add the yoghurt and combine 4 seconds / speed 2

    Pour into a bowl or jug and chill in the frige for a few hours or until well chilled

    To serve, remove from fridge, add torn mint leaves, mix well and ladle into soup bowls. Garnish with lemon zest

Tip

Can serve 2 as a full meal or 4 as a starter.  If you wanted to make it dairy free you could omit the yoghurt.
