Creamy Spinach and Cashew Soup

Ingredients

4 portion(s)

  • 4 cloves garlic
  • 1 --- brown onion, medium
  • 30 grams olive oil
  • 1 tablespoon EDC vegie stock
  • 250 grams sweet potato
  • 2 bunches spinach or mixture of greens
  • 1 level tsp paprika, or to taste
  • salt and pepper to taste
  • 150 grams Cashews raw
  • 700 g grams water

Recipe's preparation

  1. Add Garlic and Onion to Thermomix Bowl and chop 3 sec/Speed 7.

  2. Add 30g olive oil, Saute with MC removed, 3 mins/Varooma/speed 1

  3. Add potatoes, water and stock and cook 12mins/100 degrees/speed 1

  4. Add cashews to potato and stock, blend  20sec/gradually increasing from speed 1 to speed 9

  5. Add spinach and or other greens until you fill the bowl to the lid. You may need to use spatula to mix in. Gradually blend from speed 1 to speed 9 for 40 seconds or until smooth.

  6. Season with Paprika, salt and pepper and mix 10 sec/speed 4

Tip

Add any greens such as kale and fresh greens from the garden.  It is a bright green when made because the spinach is only heated and not cooked.  If you keep it it will be a duller colour. Serve with fresh cream or even better organic greek yoghurt.  White potato, pumpkin and zucchini also work well if you don't have sweet potato.

    So I had a lot of baby spinach leaves to use up.
    Nuts - I blitzed (5 sec spd 9) then set aside.
    Spinach - I filled the TM31 bowl, blitzed (5 sec spd 6) and set aside on top of the nuts.
    Did Garlic and Onion, added oil, saute.
    Added the potatoes, then blitzed them (10 sec spd 9).
    Then I added the water, stock and the nuts and spinach I set aside earlier. Cooked 12 min 100 degrees speed 1.
    Then blitz 1 min speed 1 increasing to speed 9.
    It came out a more khaki green soup, but lovely, and no it wasn't overly 'spinachy' so I think the recipe is pretty forgiving with how many greens you want to add!

    This soup had some really good flavours, and it was very filling. I did find my spinach was a little stringy, so i either didn't belnd enough or next time i would blend it all at once.

    You add the oil after you have chopped the onion and garlic, so you can sautee tmrc_emoticons.).Looks like they forgot to add the water to the ingredient list. I am going to try 700g since someone else commented that 500g wasn't enough.

    Hello... This recipe looks amazing!  I'm just a bit confused, Step 3 says to add the water, but I can't see any water listed in the ingredients, so I'm not sure how much to add.  Can anyone assist?
