Creamy Zucchini and Bacon Soup (Madeleine Biancardi Taste Primal)

Zucchini Soup

  • 200 grams bacon rashers, roughly chopped and frozen
  • 1 brown onion, peeled and cut in half
  • 3 cloves garlic, peeled
  • 1 tbsp coconut oil
  • 600 grams zucchini, roughly chopped
  • 2 tbsp Vegetable Stock Paste Concentrate
  • 600 grams water
  • 1/2 lemon
  • 1 tsp Nutmeg, ground
  • 120 grams Baby Spinach Leaves

Crispy Bacon

  • 100 grams bacon rashers, finely chopped
  • 1 tsp coconut oil

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To make the soup
  1. Place bacon rashers, onion and garlic cloves into the mixing bowl and chop 5 sec/speed 5

    Scrape down sides of bowl and add 1 tbsp coconut oil. Cook 5 min/110C/speed 1 reverse

    Add zucchini, vegetable stock paste and water, cook 20 min/95C/speed 1

    Add the juice of half a lemon, the nutmeg and baby spinach leaves and mix with the spatula, blend for 1 min/speed 5-9

  2. To make the Crispy bacon
  3. Add the finely chopped bacon and coconut oil to a fry pan, and cook on med/high heat until crisp. Drain on paper towel until soup is ready.

  4. To serve
  5. Serve soup in 4 bowls topped with crispy bacon

    Can also be served with a dollop of coconut yoghurt for extra deliciousness

    Love this recipe, it has great macros I just leave out the 100g if crispy bacon and sub coconut oil for butter. Definitely a great way to use up the lots of homegrown zucchini's we have at the moment. I really like adding a dollop of Greek yogurt before serving too. Very filling and yummy thanks for sharing.

    This is one of the most delicious soups i have ever had! And healthy as well! Love it, as did my fussy 7 year old and even fussier husband who usually wont eat anything green.

    I was a bit short on spinach leaves but had some broccoli, so i added a handful of brocoli along with the zucchini.

    Very tasty soup - thank you. I didn't have enough zucchini, so added double the amount of spinach. Also used chiken stock instead because that was what I had. Will definitely make again!
