Easy Roasted Pumpkin and Garlic Soup

Soup

  • 600 grams pumpkin
  • 2 cloves garlic
  • 500 grams water
  • 1 tablespoon vegetable stock, see EDC Cook Book

Recipe's preparation

    Soup
  1. Place Pumpkin and garlic cloves on baking tray. Gently toss with Olive Oil and roast approx 30mins 200 degrees C or until pumpkin is softened. 

    Scrape slightly cooled (to stop burning fingers) pumpkin and sqeeze roasted garlic from the husk into TM bowl. Add water and stock. 

    Cook 8mins 100 degrees Speed 1. 

    Blend ingredients by slowly turning dial from Speed 1 up to Speed 9 for 30 seconds. 

    Serve with cracked pepper, chives, parsley, a dollop of sour cream or any other favoured toppings.

Tip

Make use of your hot oven after roasting by cooking something else easy such as banana bread to save electricity.

    So delicious. I was sceptical this would be tasty without cream but it's perfect and I can do without the extra fat! I forgot to weigh the pumpkin - just roasted half a butternut and the consistency was good.

    Great easy recipe, thanks for sharing! I added one carrot, one onion and a stalk of celery (for added nutrition) and it worked out fantastic! Also added cumin and some cayenne pepper for added flavour. A go to recipe. Thanks.

    I wanted to make an extremely  quick and easy soup so i couldnt go past this one.. i weighed 750g pumkin but after i roasted and put it in the thermomix it weighted only 600g, so i added a small diced  sweet potato (i wanted to make a slightly bigger qnty) and cooked about 12 minutes. I also roasted my pumpkin with dried rosemary. Turned out beautifully, glossy and smooth served with toasted ciabatta. Yummo

    Thanks Lillo and everyone else. I agree that the choice of pumpkin is important; I like Jap and Kent pumpkins. i also love AustraIian or Spanish garlic as it's unbleached and the cloves are larger. Good quality ingredients are the key in simple recipes.

    Blown away by this magnificent soup...I realise that the pumpkin you use is also of importance, but having just made this, I have a silky smooth full bodied soup with an incredible depth of flavour. I am now going to make (as suggested in teeny winks comment below) the 'Super Soft Grain Free Paleo Bread Rolls' to have with the soup for tea tonight. Lovely change not to be adding cream or milk to make nicer...it just doesn't need it!

    I am slightly obsessed with pumpkin on any day but this roasted pumpkin soup was a really nice change from my regular creamy pumpkin soup. The flavour is devine! I just hope it's a hit with the rest of the family who's favourite meal is my regular soup.
