Ingredients

  • 6 spring onions, cut into pieces
  • 20 g olive oil
  • 1000 g water
  • 1 tbsp TM stock concentrate
  • 500 g peas, fresh or frozen
  • 1 bunch mint leaves, plus extra to serve
  • plain yoghurt or cream, to serve

Recipe's preparation

  1. Place spring onions and oil into mixing bowl and chop 3 sec/speed6.

  2. Add water, stock and peas and cook 8 min/100ºC/speed 1.

  3. Add mint and cook 3 min/100ºC/speed 1.Puree for 1 minute by bringing speed up slowly to speed 10.

  4. Transfer into a sealable storage container and place into refrigerator to chill for 4 hours before serving.

  5. Serve with a dollop of plain yogurt, or drizzle of cream and sprigs of mint to garnish.
