Mum's Vegetable Soup

  • 1 brown onion
  • 2 clove garlic
  • 3 potatoes
  • 200 grams Zuchhini
  • 300 grams pumpkin
  • 100 grams broccoli
  • 1 tbsp vegetable stock
  • 1000 grams water

Recipe's preparation

    Soup
  1. Slice and peel all vegetables.

    Place zucchini and broccoli in Varoma with the rest f the vegetables and stock  in the Closed lid with water.

    Cook for 25 minutes Varmoa / Gentle stir setting Counter-clockwise operation.

    Once cooked remove the Varoma and add zucchini and broccoli to the Closed lid and blend for 15 seconds / speed 7 with the measuring cup in.

    Serve in bowls.

    easy to make but found needed less water to keep below the maximum mark on the jug when steamed veg were added. Definately needed added salt and pepper (extra stock?)

    Great recipe, the whole family loved it. Had loads of flavour, could be used to use up the leftover vegies. I can see this becoming a regular

    This is by far the best Vege Soup I have made in the Thermomix.. I substitute veggies & quite often will add carrot, sweet potato instead of pumpkin and sometimes throw in brussel sprouts & cauliflower too. YUM and so easy! Even the kids love it!
