Mushroom lemon and thyme soup

  • 1 strip of lemon zest
  • 300 grams mushrooms
  • 1 --- onion brown
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 2 --- potatoes, peeled, roughly chopped
  • 2 tablespoons vegetable stock concentrate
  • 1 litre water
  • 2 teaspoons thyme leaves, fresh
  • 1 tablespoon lemon juice

Recipe's preparation

  1. 1. Chop mushrooms in half of they are large.

    2. Mill zest for 3 seconds at speed 9. Scrape down sides and repeat if needed. Set lemon zest aside.

    3. Chop onion and garlic for 3 seconds, speed 7.

    4. Add oil, sautee 3 minutes, varoma, speed 1.

    5. Add all other ingredients except the lemon juice, cook 10 minutes, 100 degrees, speed 1.

    6. Add lemon juice. Blend 30 seconds, speed 4.

    Thank you for the recipe!

    I added 100 grams more mushroom and an extra onion as they were both small onions.

    It turned out very nicely, thank you, having just tasted it!
