My hearty and delicious Minestrone soup

Ingredients

4 portion(s)

1 Clove garlic

  • 1 clove garlic
  • 1 rasher of bacon
  • 1/2 leek, Or 1 brown onion, peeled & halved
  • 30 g olive oil
  • 20 g Butter
  • 1 stalk Celery
  • 1 carrot
  • 1 --- zucchini
  • 100 g Peeled white potato quartered
  • 1 400g tinned diced tomatoes
  • 2 tsp TM Vege Stock Paste
  • Frozen peas and corn
  • 50 g tomato paste
  • 1-2 tsp dried italian herb mix or equivalent fresh herbs
  • 1 --- 400g can bean mix
  • 650 g water
  • 80 g Gluten free spirali pasta

Recipe's preparation

    Add garlic, bacon and leek to bowl, mix 2 seconds, speed 5
  1. 1. Add peeled garlic, roughly diced bacon and chopped leek to bowl, mix 3 seconds, speed 5

    2. Add butter and olive oil, sauté 3 mins, speed 1, varoma, Counter-clockwise operation

    3. Add carrot unpleeded and cut into quaters and chopped celery, chop 3 seconds speed 5. Then sauté 2 mins, speed 1, varoma Counter-clockwise operation

    4. Add chopped zucchini and cut up potato, chop 3 seconds, speed 5. Then sauté 2 mins, speed 1, varoma Counter-clockwise operation

    5. Add tomatoes, tomato paste, stock paste, water and spice mix. Cook 15 mins, 100degrees, speed 1, [Counter-clockwise operation

    6. Add frozen peas and corn, drained can of bean mix, pasta and cook 10mins, 100 degrees, speed 1, Counter-clockwise operation

    7. Serve with grated Parmesan.

    **If noodles not cooked, continue  5- 7 mins 100 degrees, speed one, Counter-clockwise operation

Tip

The size of the vegetables, how you prepare them and how long you chop them is up to you and how chunky you like your soup. 

The bowl will be really full, however it all still cooks evenly. Either leave the mc on or place simmering basket on top to stop spitting.

When reheating you'll need to add extra water as the soup thickens loads.

A traditional italian minestrone, all the vegetables are 'cooked in' to the soup individually.

    Just made this, omitted the frozen vegies and added Portobello mushrooms and chilli powder - simply delicious.
