  • 1 leek, roughly chopped
  • 4 potatoes, roughly chopped
  • 1 bunch silverbeet leaves, roughly chopped
  • 1 clove garlic
  • 40 grams Butter
  • 2 level tablespoons vegetable stock (BCB)
  • 800 grams water
  • 125 grams sour cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Potato and Silverbeet Soup
  1. Place silverbeet into TM bowl and chop for 5 seconds on speed 7.

    You just want the leaves broken down enough to fit it all in the bowl.

    Remove silverbeet from TM bowl and set aside

    Place garlic and leak into TM bowl and chop for 3 seconds on speed 8 or until finely chopped.

    Scrape down sides of the bowl.

    Add butter and sauté for 3 minutes at 120 degrees on speed 1.

    Scrape down sides of the bowl.

    Add potatoes, silverbeet, water and stock to the TM bowl for 20 minutes at 100 degrees on speed 1 or until potato is soft.

    Blend for 30 seconds at speed 7 or until it reaches the consistency you desire.

    Pour into Thermoserver and add sour cream and salt and pepper to taste.

    Serve immediately

Tip

You do not have to chop the silverbeet up in the TM if you dont want to. The leaves just need to be chopped down enough to fit into the bowl.
