Pumpkin and Sweet Potato Soup

  • 2 clove garlic
  • 1 --- onion, Cut in half
  • 30 grams coconut oil, or Macadamia Oil
  • 500-700 grams pumpkin, peel and cut in 2" chunk
  • 100-200 grams sweet potato, peel and cut in 2" chunk
  • 1 can 400g coconut cream
  • 2 tablespoon vegetable stock
  • 1 teaspoon turmeric, Optional

Recipe's preparation

  1. Put garlic and onion in the bowl speed 5 for 5 second Scrape down.

    Add coconut of macadamia oil at varoma, 3 minutes speed 2.

     

    Add pumpkin and potato, speed 7 for 5 second, scrape down.

    Add coconut cream, vegetable stock and turmeric powder.

    100 degrees, 15 minutes, speed 3.

     

    Carefully open the measuring cup to release the steam. Then put it back in place.

    Slowly increase from speed one to 9 for 1 minute or until smooth.

     

    Serve warm….enjoy.

Tip

I sometimes use fresh termuric, I will then add with pumpkin and sweet potato at the beginning. Serve with a drop of cream and salt& pepper.
