Pumpkin soup

  • 1 --- pumpkin, Half to one whole
  • 1 onion, Chopped into quarters
  • 6 garlic cloves, Whole
  • 1 ginger, Sliver
  • 2 tomatoes, Chopped into halves
  • ground black pepper, To taste
  • 3 chicken or vegetable stock, Dessert spoons or to taste
  • Parmesan cheese, Sprinkle when serving

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Cut pumpkin into pieces with skin on
    Place pieces into large saucepan
    Cover with water
    Bring to boil
    Reduce to simmer
    When soft, turn off hotplate and leave to cool
    When cool, scrape out pumpkin from skin. It's easier to cook first and scrape out.
    Return pumpkin to pot in water pumpkin was cooked in.
    While pumpkin is cooking, peel onion and garlic, chop onion into quarters, place in Thermomix with whole garlic cloves, ginger and cut tomatoes for 3 seconds at speed 6.
    Put a little olive oil in a pan and turn heat up high, add onion mixture and brown on stove-top.
    Add this onion mix to pumpkin.
    Turn heat to high until soup mixture starts to bubble.
    Reduce heat to lowest level and simmer for 20 minutes.
    Remove from heat and serve with sprinkled parmesan cheese to taste.

Tip

Soup is nourishing, hearty and delicious and with the large pot, will either feed a family for two meals or extra can be frozen in portions.

I like to cook the soup in a pot on the stove and since the soup is easy to make, because of the skin, it's easier to cook the pumpklin with the skin on and continue with the process once the skin is scraped out once the pumpkin is cooked. It's harder to chop and peel raw pumpkin so I do it this way when the pumpkin is cooked and cooled.

The Thermomix is just great for the chopping of onions, garlic, ginger and tomatoes.
