Quick and Easy Chicken and Sweet Corn Soup

  • 1/2 onion, peeled
  • 2-3 cloves garlic, peeled
  • 20 grams olive oil
  • 500 grams chicken breasts, cut into tenderloins/cubes
  • 1 can creamed corn, canned
  • 1 can sweet corn kernels, drained
  • 1 tbsp chicken stock paste, I used the skinnymixers recipe
  • 750 grams Boiling water
  • 2 eggs, lightly whisked
  • 3 heaped teaspoons cornflour, mixed with 3/4 cup of water
  • 2 spring onions, to serve
  • salt, to taste
  • pepper, ground, to taste

Recipe's preparation

  1. Place onion and garlic in TM bowl and chop 5 seconds / speed 6. Scape down bowl
  2. Weigh in oil and saute 3 minutes / 100 degrees / speed 1
  3. add chicken and cook for 6 minutes / 100 degrees / reverse Counter-clockwise operation / speed 1
  4. Shred chicken 4 seconds / speed 4
  5. Add creamed corn, corn kernels (Drained), chicken stoke paste, and boiling water. Cook 10 minutes / 100 degrees / speed 1
  6. Set to 2 minutes / speed 1 / measuring cup off then slowly add cornflour mix and then egg through the hole
  7. Serve with sliced spring onion or continental parsley
