Quickest Ever Creamy Chicken & Corn Soup

Ingredients

  • 600 grams cooked BBQ chicken, ( XL/Family size chicken, most skin removed and roughly broken into pieces)
  • 1 can light & creamy evaporated milk, (or 375ml)
  • 1 can Creamed Corn, (or 400g)
  • 500 grams chicken stock liquid
  • 1 tablespoon dried onion flakes
  • 1 teaspoon sugar, (or to taste)

Recipe's preparation

    Method
  1. Place the roughly broken chicken into Closed lid, chop briefly on speed 5/5 seconds. Pieces should not be too small or too heavily shredded (i like my chicken chunky!)

  2. Add all other ingredients except sugar, quickly combine with spatula and cook 100, speed 1, reverse for 12 minutes or until well boiling.

  3. Taste (BEWARE! HOT!), and if necessary, add the tsp of sugar, cook 100, speed 1, reverse for 1 minute.

  4. Transfer to thermoserver to keep warm, this will also help flavours develop.

  5. Serve with crusty ciabatta bread or buttered french stick.

Tip

Depending on how small your chicken pieces are when pulling off the chicken, you may not need to chop it in the Closed lid
