Roast Capsicum and Tomato soup with Goats Cheese

  • 20 g olive oil
  • 2 red capsicums, roasted
  • 2 cloves garlic, peeled
  • 1 brown onion, peeled
  • 800 g tomato, tinned
  • 1 tablespoons Vegetable stock paste
  • 300 g water
  • to taste sea salt
  • to taste black pepper
  • 80 g goat's cheese

Recipe's preparation

    Roast Capsicum and Tomato soup with Goats Cheese
  1. 1. Roast and peel capsicums. Set aside.

    2. Place garlic cloves and onion in bowl and blitz on Speed 7 for 5 seconds.

    3. Scrape down sides of bowl and add oil and butter and sauté for 4 minutes on 100C, Speed 1.

    4. Add tomatos, capsicum, stock and water and cook for 10 minutes on 100C, Speed 1.

    5. Place MC over the hole and gradually increase to speed 10 for 30 seconds.

    6. Add salt and pepper to taste.

    7. Pour soup in to warmed bowls, sprinkle with goats cheese.
