Really delicious soup. We made with some red capsicums that needed to be used. Probably did twice or three times amount of capsicum and only a couple of tomatoes. Just roasted onion, capsicums and tomatoes and blitzed them all together. Really nice with a dollop of yoghurt and some grated cheese. Added quite a bit more liquid too as it was quite thick.

Capsicums, tomatoes, red onion, garlic all went into the oven for 20 odd minutes. Used sour cream instead of yoghurt. Only enough for a main meal with sour dough for two hungry men. Used vegeta so needed more than a tablespoon of stock. Added Salt & Pepper. Amazing, thank you!

    Yum, amazing !
I used the amout of fresh tomatoes but also added 1 can of whole tomatoes.
Also didn't use youghut (as I didn't have any at the time) so substituted with sour cream.
    10/10

Wonderful soup recipe. Easy to make, tasty and my husband loves it. It’s thick which is how we like soup, however if you like a thinner soup just a very small amount of extra water.

    Submitted by miaellen on 23. April 2016 - 18:57.

Delicious soup, made it twice now... Roasted half the tomatoes both times. second time I added 2 red chillies for some spice and sprained it through a fine siv as I found it quite 'bitty' from the seeds.

    Fantastic!

What a great recipe! I didn't have the vegie stock, so I added 1 1/2 teaspoon of powered chicken stock which worked well. Also wanted to make it creamy, so two tablespoons of thickened cream after pureeing. It is an absolute winner!! Thanks so much for sharing!

    Submitted by Lael on 7. July 2014 - 15:46.

This soup has deep 'zing' or 'X-factor'! The cooking aroma whetted my appetite and the result lived up to expectation. I'm a new Thermie user and this is one of those dishes that I would have only expected ever to eat in a Michelen rated restaurant! ...And instead, I created it myself, so easily in my own kitchen. Magic!
