Seasonal Pumpkin Soup

Ingredients

2 litre(s)

  • 25 g olive oil
  • 2 cloves garlic
  • 1 large onion
  • 1 carrot
  • 1 Stick Celery
  • 400 g pumpkin, cubed. (Peeled, seeds removed and cubed)
  • 4 tspn TH Vegetable Stock Concentrate.
  • 1 tspn White Pepper.
  • 100 g water

Recipe's preparation

  1. 1. Place the Garlic, Onion, Celery and Carrot into the TM Bowl and chop for 10 Seconds on Speed 6.

    2. Add Olive oil and Saute for 3 Minutes @ 100*c for 3 Minutes.

    3. Add the cubed pumpkin and Blend for 30 Seconds on Speed 7.

    4. Next, add the Vegetable concentrate and water.

    5. Cook for 25 Minutes on Speed 2.

    6.Check pumpkin is cooked. Add the white pepper and Blend on Speed 9 for 1 Minute until nice and smooth and glossy.

    &. Serve and enjoy.

Tip

Any Pumpkin can be used. Seasonal produce will be cheaper and tastier.

I used Kabocha squash from a friends garden. Fantastic.

    I would personally leave out the carrot and garlic next time, they seemed to take over the dish.
