- 400 g broccoli
- 1000 g water (boiled)
- 2 tsp salt

Recipe's preparation
- Put boiling water, broccoli florets, salt and pepper into the TM bowl.
- Cook on Varoma temp, Sp 1, reverse counter-clockwise operation for 8 minutes.
- When finished, take lid off and put basket into the TM bowl on top of the broccoli.
- Strain liquid (through basket) into a spare bowl DO NOT DISCARD!
- Weigh 300g of iquid back into the TM bowl on top of the broccoli.
- Puree on Sp 10 for 30 seconds.
- Add extra salt and pepper if required.
- Best served with a little parmesan or goat's cheese on top.

Tip
- This is a beautifully creamy soup but works out at just 60 calories (or zero WW points) per serve! All you need is some broccoli and you are ready to go!
- The recipe is based on Gordon Ramsay's Broccoli soup.
- You could boil the water in the Thermomix, but I do it in the kettle to speed up the process!

Yummy - thanks for sharing. I served atop some walnuts, and Tofutti - vegan option. Plus added a couple of sautéed slices of pancetta. I used broccolini.
Note to self: Top with dulse flakes for vegan option.

Quickly & easy recipe! I added the vege stock concentrate as I love salt and some cream and Parmesan to serve.

Yum! So simple & healthy too, can hardly believe it is just broccoli, water, salt & pepper! Used veggie salt but next time will try the veg stock paste. Made a 1.5 batch in the TM5 with florets & stalk. Kids & adults demolished it. Thanks for posting!

so quick and easy i love this! As others had suggested i used 1 tbsp of the stock paste instead of any seasoning and its delicious! Will be stocking up on brocolli and freezing this!

This is a fabulous recipe, so quick and versatile. I've made it loads of times as our garden is bursting with brocolli. I've added a dollop of TM Veg Stock, and thrown in left over roasted veggies when blitzing at the end. It's a no fail gem of a recipe, and my hubby LOVES it!! Thanks.

I had an abundance of broccoli in the fridge so I made this for my family and it was a huge hit! I popped a small dollop of sour cream on top before serving and it was delicious!

This is super quick and
This is super quick and really yummy. I used half broccoli florets, and made the rest of the quantity up with the stalk which I chopped up in TM first - made this a very economical and tasty soup. We had a drizzle of cream and generous sprinkle of parmesan to serve.

Made this for lunch today it is really lovely. It needed extra salt and peper to taste as per the recipe, and the parmesan cheese as suggested was a perfect addittion
