Sweet Potato & Cumin Soup

  • 2 garlic cloves
  • few sprig parsley
  • 2 tsp ground cumin
  • 1/4 tsp ground tumeric
  • salt and pepper to season
  • 20 g light olive oil
  • 40 g red lentils, washed
  • 300 g sweet potato, peeled & roughly chopped
  • 1 carrot, cleaned & roughly chopped
  • few sprigs fresh mint leaves, finely chopped

Recipe's preparation

  1. Chop Garlic - 2 secs/sp6

    add cumin, tumeric and oil - saute 4 mins/90 deg/sp 1

    add lentils - mix 10 secs/sp 2

    Season with Salt and Pepper

    Place Sweet Potato in basket

    Add 640g water

    Cook 20 mins/varoma temp/sp 2 until sweet potato is soft

    remove sweet potato from basket into bowl.

    puree slowly at first up to speed 9 for about 40 secs.

    add 3/4 of chopped mind leaves - mix 10 secs/sp 3

    pour into Thermoserver and allow mind to infuse before serving.

    I found the instructions for this recipe to be somewhat unclear. I added some stock to my water from some extra flavour, but I still found the soup lacking flavour. I also found the soup a little thick (even with an extra 100g of water), so i would add more liquid.

    No indication of when to add carrot, however I would assume it goes in the basket with sweet potato. I found this way too sweet and a little bland. Perhaps some onion or substituting some of the sweet potato with regular potato may not make it so sweet?
