Sweet Potato Soup
- 2 brown onions, peeled and halved
- 2 garlic cloves, peeled
- 800 grams sweet potato, peeled and chopped
- 1100 grams water
- 3 Veg Stock Cubes, or vegetta equivalent
- 1 tablespoons brown sugar
- 30 grams olive oil
- Dried Chives, to sprinkle on top

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add onion and garlic to the bowl, 5 Secs on Speed 5 scrape down and mix 3 secs speed 5 .
Add oil and sautee 4mins, 120 degrees at speed 1 (this helps to give good flavour to the onion and garlic)
Add Sweet Potato and Chop 7secs on Speed 5
Add Water and Stock
Cook 20mins 120 Degrees speed 2
then 10 mins 100 Degrees speed 1 to finish.
Puree Speed 7 10-15 Seconds and serve with a sprinkle of dried chives

Tip
Its beautiful served along side some freshly made bread rolls and with a dollop of sour cream then chives sprinkled on top.
