Tornado Moroccan Spiced Pumpkin Soup

  • 1 teaspoon cumin seed
  • 1 teaspoon coriander seeds
  • 1 teaspoon fresh ginger
  • 1 onion, Cut into 4
  • 2 garlic cloves
  • 1/2 teaspoon turmeric
  • 1 pinch cayenne pepper
  • 1 tablespoon Harissa
  • 1 tablespoon olive oil
  • 2 tablespoon vegatable stock concentrate from TM everyday cookbook
  • 1.5 litre water
  • 200 grams tinned chopped tomatoes
  • 500 gram pumpkin, Cut into small bite size pieces
  • 1 small handfull fresh coriander, chopped finely
  • 250 grams couscous

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1.  Place Cumin and Coriander into bowl. 20 sec / Speed 9

    2.  Add Onion, garlic, ginger. 5 sec / Speed 7

    3. Add olive oil. Saute 3 min /  120 C / Speed 1

    4. Add Tomatoes, veggie stock and water. Cook for 10 mins /  120 C / Speed 1

    5. Add Pumpkin, cayenne and Harrisa Cook for 5 mins/ 120 C/speed 1

    6. Add Coucous 2 mins /100 C /Gentle stir setting

    7. Pour into Thermoserver.

    8. Pumpkin will be al dente and sweet against the spiceyness

    9. Serve with Fresh Bread

Tip

* Adjust spices to taste

* Make sure the pumkin is cut into small pieces so that its al dente and does not become mushy
