Variation Minestrone Soup

Minestrone Soup

  • 1 bunch parsley / basil / any herb
  • 1 onion brown, halved
  • 3 cloves garlic (or more, I love garlic)
  • 30 grams Ghee
  • 1 can Diced Tomato
  • 1 bunch Celery (or whatever you have)
  • 40 grams tomato paste
  • 600 grams water (give or take depending on veggie amount)
  • 1 tablespoon Chicken stock powder (or stock paste if you have it)
  • 1 heaped tbsp Dried rosemary (this really makes it taste amazing)
  • 1 salt and pepper to taste
  • 1 carrot, roughly chopped
  • 1 Zucchini (or whatever you have), roughly chopped
  • 1 Leek (or whatever you have), roughly chopped
  • 2 tomatoes, roughlychopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Minestrone Soup



        1. Chop parsley 3 seconds, speed 7. Set aside.













        1. Place onion and garlic into TM bowl and chop for 3 seconds on speed 6. Add oil and sauté for 3 minutes 100° speed 1.














        1. Add all remaining ingredients except zucchini and cook for 15 minutes 100° Counter-clockwise operation speed 1
















        1. Add zucchini (and any other soft vegetables) and cook for a further 8 minute 100° Counter-clockwise operation speed 1

Tip

I LOVE this soup as you can use whatever vegetables you have left in the kitchen. As long as you have the garlic, tomato paste, diced tomatos and rosemary i feel like you can't fail this recipe. PLUS it's super quick, healthy and hearty!

You can also add a can of cannellini beans if you want it to be even thicker.[/b]
