Weight Watchers lentil, tomato & corn soup

Ingredients

Soup

  • 1/2 brown onion, Cut in half
  • 1 clove garlic, Peeled
  • 20 grams olive oil
  • TM stock concentrate, To taste (1-2 tsp)
  • 1 can crushed tomatoes (400g)
  • 1 can brown lentils, Drained & rinsed
  • 1 Cup Frozen Corn Kernels
  • 1 Cup water

Recipe's preparation

    Soup
  1. 1. Put onion & garlic in bowl. Cut on speed 7 for 5 seconds. Scrape down sides of bowl

     

    2. Add oil. Cook on speed 1 at 100 for 2 minutes.

     

    3. Add all other ingredients. Cook on Counter-clockwise operation at 100 for 13 mins speed 1.

     

    4. Serve & enjoy

Tip

If serving two, this equates to 6 pro-points each serve. 

 

You can serve with 1 tbs grated Parmesan cheese on top for an extra pro-point.

 

Add extra veggies such as beans, carrot, asparagus etc to make this soup even more heart & nutritional.
