  • 1/2 Head of Cauliflower, Broken into Florets
  • 1/4 leak, Cut in 1/2
  • 1 l water, pre boiled
  • 1 cube chicken stock paste, or TM Veg Stock
  • 2 potatoes, Cubed
  • 2 Rashers of Bacon
  • 1 onion, Cut in 1/2
  • 1 clove garlic
  • 10 g Olive Oil or Butter
  • 50 g cream

Recipe's preparation

    Soup
  1. Throw the clove of garlic, bacon and onion into the Thermomix and Chop at Sp7 / 7Sec's.

    Scrape down the sides and add 10g of Olive Oil and saute 5mins/ Gentle stir setting/ 100.

    Add Cauliflower, Leek, Potato, (celery/zuckini/mushrooms or whatever else you have) into the bowl and chop Sp 5 / 5 sec.

    Add 1L of water and stock cube / Paste or 2 tablespoon of TM Stock.

    Cook for 15 mins / 100 / Sp 3.

    Add Cream and mix for 1 min / Sp 8.

Tip

You can use anything for this soup - I had started out making a plain Cauliflower Soup, then I decided to add bacon and a Potato(because I put them in everything) and a leek and some Mushrooms.  

We had it for lunch and it was really nourishing and tasty a winner with everyone.

    Fantastic soup. I blitzed up some red lentils at the very start just for extra nutrients and to thicken up the soup. I also added more bacon and used pumpkin, 1 carrot, broccoli and stem, sweet potato, leek, onion and 2 garlic. Did not need to add in any cream, it was creamy already. Loved by the whole fam!

    Fantastic! Will make again. I just used cauliflower,bacon and zucchini but added in a couple more garlic cloves. Reduced the water a little too. Was very thick, creamy and yummy!

    Thank you for sharing this recipe. I've been making it now each week and adding it to my toddler's mash, risoni, risotto etc etc. It's a wonderful way to get even more veggies into his diet and also use up extra vegetables in the fridge.
