Seafood Chowder

Ingredients

6 portion(s)

Seafood Chowder

  • 2 sprigs parsley
  • 1 Large Brown Onion, Peeled & Quartered
  • 1 clove garlic, Peeled
  • 1 carrot, Peeled & Quartered
  • 2 Rindless Bacon Rashers, Roughly Chopped
  • 40 grams Butter
  • 3 tablespoons plain flour
  • 2 Potatoes (Medium) Skin on, Diced into .5cm cubes*
  • 500 grams Milk
  • 400 grams hot water, Extra to adjust taste
  • 2 tablespoons TM chicken stock concentrate, Extra to adjust taste
  • 100 grams frozen corn kernels, Or Fresh
  • 100 grams frozen peas
  • 150 grams Firm White Fish (See Note), Coarsley Cut
  • 200 gram Salmon FIllet, Coarsley Cut
  • 200 grams Prawns, Shells Removed and deveined
  • 1 Loaf Crusty Bread, Cut into thick slices

Recipe's preparation

    Method
  1. 1.       Chop Parsley 3 sec/Spd 5. Set Aside.

    2. Add onion and garlic to TM Bowl. Chop 3 sec/Speed 5. Scrape down sides of bowl. Add bacon & Carrot, Chop 3 sec/Speed 5.

    3.       Scrape bowl. Add Butter. Saute 4 mins/100C/speed 1.

    4.       Add Flour, cook 2 mins/100C/speed 1.

    5.       Add Milk, Stock and TM stock concentrate. Put Potatoes into TM steamer basket and insert into bowl. Cook 40 mins/90C/Spd 3 (or until potato is cooked).

    6. Put Potatoes, Peas and Corn Kernels and a small amount of chowder (2 x MC) into the Thermoserver. Adjust taste of chowder base to your liking with TM chicken stock concentrate.

    7. Add Corn, Fish, Salmon and Prawns to TM bowl and cook 4 mins/90C/Counter-clockwise operationGentle stir setting.

    8. Pour into Thermoserver.

    9. Serve in a bowl topped with parsley, serve with a slice of crusty bread.

Tip

 

I serve a big bowl of this as a main meal.

For the fish component. use a firm white fish such as Perch, Grenadier, Ling or Blue Eye.

* It is essential that the potato cubes are cut to this size.

    Hi there! Thanks for this totally delicious recipe! I used a frozen marinara mix for mine. A little too much liquid so I will reduce it a bit next time. I also used waxy potatoes and they stayed intact which I liked but the DH did not lol. So I’ll use mashing ones next time as I think they’ll also thicken it up a bit as they mush up.

    Yummy chowder will definitely make again. I pre- cooked potatoes in micro wave for 2 mins before adding to thermomix basket. I also used 500g milk and 250ml of pre-packaged chicken stock and reduced the thermomix chicken stock to 2 tablespoons (750g of liquid instead of 900g) I didn't add the hot water as there is more than enough liquid. Cooked seafood an extra 2 mins too.

    Very tasty. My potatoes weren't cooked, but I probably didn't cut them small enough and they were also a waxy variety. I added a dash of cream for richness. Loved it - will make again!

    Loved this seafood chowder. I used marinara mix, 750g potatoes and added same peas as corn, also added celery at start with carrot.  I cooked the potato in the milk but did not blend to smooth. Might try a Lille but of chilli in it next time.

    The chowder was quite nice, as per previous comments I decideded to added 100g less of liquid and 1tbsp less of flour.  We still had heaps of liquid so if I make it again I would cut the water back by another 100g to see how that works.

    For space- and time reasons I prepared the potatoes in the microwave but that was my only deviation.

    This meal is to die for - absolutely delishes.

    I thought the recipe was Ok but sorry not so blown away by it, next time I will seek not to use any flour think it dumbs down the flavour I will use leeks for extra flavour. Will look to blitz them with the carrot.  The potato was cut to size but needed 5 mins more .... Will depend on the variety of the potato As well as the dice size. The fish was raw but cooked well within the time.  Great starting point though.

    I made this last night. It was very easy & very tasty. My husband and I enjoyed it. A couple of things I will mention, I did cook the potatoes for an extra 10 mins as they we're not cooked through, even though they were chopped to size & I gave them a blitz to break up a bit. There was too much liquid for me & my husband so I set half of the mixture aside which I intend to use for another dish. I then added the corn & a fresh seafood mix. It was lovely & we really enjoyed it. Have leftovers for a tasty quick lunch. Thanks for the recipe & comments. They helped  Cooking 7

     How did you go with the quantities? When I have made it, it has been fine, but just wondering it I need to reduce quantities. Also, did you use fresh (raw) seafood and keep the potatoes in chunks?- that how it is suposed to be cooked, just wanted to know how it went!

  • There needs to be a step in

    There needs to be a step in there before adding the seafood, where you blitz the potato.

    Should be noted this is obvioulsy for cooked seafood, not fresh/raw seafood (adjust cooking time)

    We wouldnt cook it again, it was ok. Each to their own of course.

    oh & a major thing - its too much for the bowl!?!?! What the? Also too much for thermoserver??!!! That was already taking out 100ml of liquids.

    I made this today to leave for the family for dinner as I was working late. I adjusted a few things. I used a small tin of evaporated milk plus a tin of creamed corn instead of the milk. Also I only used prawns. When the main looking time was finished I transferred it to a large saucepan and added the prawns as there was too much for the TM bowl. It was delish!!!!

    I have adjusted the cooking time so the potatoes are cooked. It is essential that the potatoes are cut into the 1cm cubes, in order for them to cook.

    I made this recipe to the instructions and I found that the potato just did not cook enough, it took an extra 20 minutes before adding the corn and seafood, I think this is because you can't heat at higher than 90% because of using the milk and it just doesn't get to the boil, also there was a lot of liquid in there to heat so I just don't think it was working effectively to cook the potato.  So I made it again today but I made a couple of slight variations.  I precooked my potato in the microwave so it was already soft but still holding shape.  I added a couple of short chillies to the onion and garlic and chopped.  I did not chopped the carrot, I just diced it, I also chopped up some celery and added with the bacon and butter to saute.  Before adding the corn and seafood I just blended for about 10 seconds to loosen the potato to thicken.  It was to die for!!  Thicker consistency and the chillie just added that extra zing that we love.   tmrc_emoticons.)
