Feijoa Barbecue Sauce
- 900 g feijoas, Topped, tailed, quartered
- 6 piece tomatoes, quartered (or one can of chopped tomatoes - 200g)
- 2 --- onion, Quartered
- 600 g vinegar, White, malt or combination of
- 200 g apple cider vinegar
- 1 level tbsp salt
- 1 level tbsp golden syrup
- 500 g sugar
- 1/2 level tsp ground cloves
- 1.5 level tsp ground allspice
- 1.5 level tsp ground ginger
- 1 level tsp crushed garlic
- 2 level tsp paprika

- Add onion to mixing bowl and chop 5 seconds / speed 5
- Add tomatoes, chop 3 seconds / speed 5
- Add feijoas, chop 5 seconds / speed 5
- Add remaining ingredients and cook 30 minutes / 100 degrees / speed 1
- Stir and check consistency
Cook 40 to 50 minutes / Varoma / speed 1 / MC off / simmering basket on (extend time to increase thickness if necessary) - Blend 10-20 seconds / increasing speed to 7
Cook 10 minutes / 100 degrees / MC off / simmering basket on / speed 1
Bottle into hot sterilised jars.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
