Creamy Thyme Chicken and Mushroom Gluten Free Quiche

  • 200 g chicken breast
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon Thyme
  • 100 g baby spinach
  • 70 g Haloumi
  • 4 l large eggs
  • 3 tablespoon coconut milk
  • 1/3 teaspoon Salt and pepper

  • 100 g unsalted butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    STEP 1
  1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a 22cm loose-bottomed tart tin with oil, then set side.

  2. STEP 2
  3. Sieve the flour for 4 sec speed 10.Add soft butter and mix for 5 sec speed 6. Add 6 tablespoons of cold water, mix for 4 sec speed 4 until a smooth dough. empty contents onto cling film, wrap into a ball and pop in the fridge for approx. 30 minutes to rest.

  4. STEP 3
  5. Dice chicken into small cubes. Crush garlic for 3 sec speed 6. add oil, chicken and thyme to bowl. cook for 4 minutes on 100 degrees at speed 1. Add mushrooms and spinach and cook for 3 minutes at 100degrees on speeds 1.

    Add lightly whisked eggs, coconut milk and a pinch of salt and pepper. Mix for 4 seconds on speed 3.[/size]

  6. STEP 4
  7. On a flour-dusted surface, roll out the dough to roughly ½cm thick. Carefully place into the tart tin and push it into the sides. Place baking paper on top and fill the tin with baking beans or uncooked rice. Place the tin on a baking tray, then pop in the hot oven for 10 minutes, or until lightly golden. Remove the beans/ rice and baking paper, place back in the oven for an extra 5 minutes.

  9. Pour the filling into the baked pastry case, then return to the oven for 35 minutes, or until the filling is almost set. Leave to cool slightly.

    The recipe has haloumi as an ingredient however no mention of it in the directions.
    The ingredients also states package of mushrooms. How much and chopped, diced, halved????

    A few issues. Its currently in oven so will see how it comes out with no cheese!!!
