Quinoa Muffins - Gluten & Dairy Free

Ingredients

Muffins

  • 1/2 onion, peeled & quartered
  • 2 Rashers of Bacon, fat trimmed
  • 20 g olive oil
  • 3 sprigs fresh flat leaf parsley
  • 30 g baby spinach &/or rocket, (2 handfuls)
  • 100 g Cooked Quinoa
  • 3 tablespoon Nutritional Yeast Flakes
  • 5 eggs
  • pepper to taste
  • sesame seeds

Recipe's preparation

  1.  

    Preheat oven to 180 degrees.

     

    Chop the onion & bacon 3sec, Speed 6.

     

    Scrape down bowl, add oil and cook for 3min, 100deg, Speed 2, Reverse. Set aside.

     

    I then just rinsed the bowl with cold water and gave a quick wipe out with paper towel to cool the bowl down.

     

    Add parsley, baby spinach &/or rocket and chop 2sec, Speed 6.

     

    Return bacon & onion to the bowl along with the cooked quinoa, yeast flakes, pepper and eggs.  Mix for 15sec, Reverse, Speed 2.

     

    Divide mixture amongst silicon muffin tray or cups.  Sprinkle with sesame seeds. Bake for 20min.

Tip

The silicon muffin tray is good as you didn’t need to grease the tray. Just run a spatula around at the end and they popped out.

    I love quinoa and these didn't dissapoint! I didn't have any spinach so I substituted with zucchini - great flavour, lovely texture and simple to make. Thanks ThermoCreations I think these will become a regular in my house.
