Apricot, coconut and orange cake: dough

  • 200 g dried apricots
  • Boiling water, to cover
  • 125 g Butter, softened and chopped
  • 150 g sugar
  • 2 eggs
  • 230 g SR flour
  • 40 g Desiccated Coconut
  • 1 orange, zest and 2T juice


  • 2 cups icing sugar
  • orange juice, enough to make spreading consistency.
  • coconut or crystal sugar to decorate, optional

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    How to: Dough
  1. Heat the oven to 180°C.
    Grease and line a regular slice tin.

    Chop apricots 5secs/sp5. Set aside in a bowl and cover with boiling water. Drain after 15 mins. Discard the water.

    Combine butter and sugar 20secs/sp4.

    Add the eggs, 20secs/sp4.

    Add the flour, coconut, zest and juice, 20secs/sp4.

    Add the apricots 10secs/sp3/rev , or until combined. Use the spatula to assist rather than risk pulverising the apricots.

    Spread evenly in the slice tin and bake for 30-40 mins, or until done when tested.

    Leave in the tin to cool before icing (below).

  3. Beat icing sugar and sufficient orange juice to make a spreadable paste.

    Sprinkle with options as listed if required.
