  • 80 grams dried apricots
  • 225 grams plain flour
  • 25 grams Corn Flour
  • 1 teaspoon baking powder
  • 100 grams rolled oats
  • 225 grams chilled Butter, cubed
  • 150 grams raw sugar
  • 2 eggs
  • 1 teaspoon Vanella extract
  • 1 tablespoon Demerara sugar
  • 130 grams frozen raspberries

Recipe's preparation

    Apricot & Raspberry Oat slice
  1. Weigh Apricots into bowl, set lid into lock position and Turbo 2 sec x 2. Set aside

  2. Add Plain Flour, Cornflour, Baking Powder and Rolled Oats to the bow and mix for 4 Secs, Speed 4

  3. Add butter and process for 4 Secs, Speed 6

  4. Add sugar, vanella and eggs and mix on Speed 4 until the mixture comes together,

  5. Using damp hands spead 3/4 of the mixture into a greased and lined 20 x 30cm Lamington tin.

  6. Spread the chopped Apricots and Raspberries over the mixture

  7. With the remaining mixture, add 1 Tablesp of Oats and 1 Tablesp of Demerara Sugar and mix for 3-4 secs.  Dap the mixture over the slice.

  8. Bake for 30 mins at 180 degrees C.
