  • 300 g Pumpkln, cubed
  • 200 g Butter
  • 200 sugar
  • 2 eggs
  • 300 g plain flour
  • 1 tsp baking powder
  • 170 g sultanas

Recipe's preparation

  1. Preheat oven to 180C.

  2. Place pumpkin into simmering baskset and cook 15-20 min/Varoma/speed  until soft. Set aside.

  3. Add butter and sugar into mixing bowl and cream on 30 sec/speed 6

  4. Add eggs and mix 10 sec/speed 4

  5.  Add pumpkin and mix 10 sec/speed 4

  6. Add flour, baking powder and sultanas and mix 20 sec/Counter-clockwise operation/speed 4 using spatula to help combine.

  7. Pour into a loaf tin and bake at 180° for 1 hour, 15 mins until a skewer comes out clean.

    I made this today, only had 200grms of cooked pumpkin, so altered the ingredients to 2/3rd n baked 50mins. It’s winner, as well as being healthy with the hidden pumpkin. regarfing last post, I didn’t know u cld freeze pumpkin?

    Just put this one of these in the oven. I had heaps of pumpkin to use up. I added 2 teaspoons of Flavourista Grandma's Secret Spice blend to the mix; coconut blossom sugar, nutmeg, cinnamon, allspice, ginger are some of the ingredients tmrc_emoticons.)
    Waiting impatiently for it to cook now.

    *cooked & mashed my excess pumpking & made up 1 cup portions in zip lock bags for the freezer.

    Beautiful flavour, just the way I like it. Lovely and moist and good texture. I cooked this in a loaf pan but next time will cook in 20cm ring tin or 20cm round tin, I thought the tin was a bit small and took a while for the middle to cook which meant the outside was starting to overcook, the size of the tin I used was 23cm by 13cm. This cake will be in my favourites, just love it, oh and I also added a teaspoon of mixed spice for extra flavour just my personal preference.
