Banana Bread
- 2 eggs
- 110 grams brown sugar
- 125 g Rice Bran Oil
- 1 teaspoon vanilla extract
- 2 heaped tablespoons natural yoghurt, optional
- 100 g walnuts, optional, chopped
- 3 ripe bananas, mashed
- 230 g plain flour, sifted
- 1/4 teaspoon salt
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon ground cinnamon

Recipe is created for

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 160 degrees
Grease large loaf tin - Place bananas in mixer and mash 5 sec/speed 6.
- Scrape down sides of mixing bowl then add oil and sugar and mix 20 sec/speed 4.
- Add eggs and mix 10sec/speed 4.
- Add vanilla essence and yoghurt then mix for 5 sec/speed 4.
If adding walnuts add now also and mix using reverse for 5 secs. - Add flour, salt, bicarb soda & cinnamon then mix
20 sec/speed 4.
Scrape down sides of mixing bowl with spatula then mix 5sec/speed 4. - Pour mixture into prepared loaf tin and bake in centre of oven for 50-60 mins until nice and brown & cooked right through (test with skewer)
- Cool in tin for 10 minutes then turn out onto a wire rack to cool.
Serve with butter.
Delicious toasted for breakfast and served with strawberries
