Banana & Chocolate Cake with Cream Cheese Icing

Ingredients

12 slice(s)

Cake

  • 250 g plain flour
  • 1/2 tsp salt
  • 1/2 tsp bicarb soda
  • 150 g Butter
  • 250 g caster sugar
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 350 g overripe bananas, about 4 medium
  • 130 g dark chocolate bite

Icing

  • 60 g Butter
  • 125 g cream cheese
  • 1/4 tsp lemon juice
  • 60 g icing sugar

Recipe's preparation

    Cake
  1. Preheat oven to 150 degrees. Grease a loaf tin and line with baking paper.

  2.  Place butter in bowl. Melt 2 min/60 degrees/speed 4

  3. Add remaining ingredients and mix 20 sec/speed 5/Counter-clockwise operation

  4. Pour into prepared tin and bake until golden brown, approximately 1.5 hours or until a skewer comes out clean.

  5. Allow to cool in tin then turn out to cool completely.

  6. Icing
  7. Put all ingredients in bowl then mix 15 seconds/speed 5 or until the mixture is completely smooth

  8. Use icing to ice cake and enjoy!

Tip

Cake is delicious with or without the icing. A great way of using up old bananas and a twist on the usual banana cake!

    This is amazing. I am one of those people who thinks I like banana cake but when I eat it I am disappointed - yep we exist 😂. So I made this cake for the family and because I had bananas that were no longer eatable and because I like cream cheese icing so figured I could at least eat some icing. There is nothing I can say that would describe this cake well enough - just do yourself a favour and make it - you won't regret it. Oh, I reduced the sugar in the cake by half because one must try to be healthy 😂 \

  • I have made this cake so many

    I have made this cake so many times I have lost count. Great way to use up those banannas that continuously go yucky in the summer heat. I make mine into muffins, put them in the freezer and then they are always on hand for my family or visitors and very handy for a shift working family member. They always turn out beautiful and moist. I  stir through the chocolate chips by hand so they don't get too crushed by the blades. Thank you for posting this recipe.
