Cherry berry cake

Ingredients

  • 250 grams Butter, melted
  • 325 grams sugar
  • 1 teaspoon vanilla essence
  • 3 --- eggs
  • 250 grams cream cheese, I use low fat
  • 350 grams Self Raising Flour
  • 80 grams Milk
  • 250 grams canned cherries, drained and pitted
  • 125 grams blue berries or raspberries, frozen

Recipe's preparation

  1. Pre heat oven to 180 degrees (or 160 degrees for fan forced)

    grease and line a 24 inch spring form cake tin

     

    Add butter to bowl- speed 4  - 50 degrees for 40 seconds

    add sugar and vanilla and mix on speed 5 for 10 seconds till light and fluffy (may need to scrape the sides down)

    add eggs one at a time whilst mixing on speed 3 through the hole and mix together

    add cream cheese and mix on speed 4 for 10 - 20 seconds

    add self raising flour and milk and mix on speed 5 - 6 for 30 seconds or until combined.

    Fold in the berries and cherries

     

    Pour into prepared tin and spread evenly

    Cook in oven for 65 - 75 mins or until sqewer comes out clean.

     

    Cool in pan for 15 minutes and then transfer to a wire rack to cool completely

     

    Place on serving tray and sprinkle liberally with icing sugar and serve!
