Chocolate Choc Chip Cookie Explosion

  • 130 g unsalted butter, Softened at room temp.
  • 100 g brown sugar
  • 75 g white sugar
  • 1 --- egg, large
  • 35 g cocoa powder, (Good quality if possible)
  • 250 g plain flour
  • 1 1/2 level tsp baking powder
  • 1/2 level tsp bicarbonate of soda
  • 1 level tsp salt
  • 300 g chocolate chips, (I use a mix of white, dark and milk)

Recipe's preparation

    Chocolate Choc Chip Cookie Explosion!
  1. Add the Butter and both sugars to the bowl and blend/cream for 1-2 minutes on speed 4. You can also add a teaspoon of Vanilla if you want at this step, you will also have to scrape down the sides occasionally to help with getting the consistency to a cram like colour.
  2. Next while th blade is still turning, add the egg and continue to whip at speed 4 for at least 30 seconds. Scrape down the sides with the spatula.
  3. Next add the flour, cocoa powder, baking powder and bicarb soda and mix for 6 seconds speed. Then scrape down the sides.
  4. Next knead on Dough mode dough mode for 1 minute or until mixture all comes together.
  5. Next add the chocolate chips and mix on reverse Counter-clockwise operation speed 4 until the chocolate chips are mixed through.
  6. Next divide the cookie dough into 8 potions (I weighed them and it was around 115-120g per piece) and roll them into balls and press slightly to flatten them then pop them into the freezer for around 20-30 mins until firm. This is when I preheat my oven at 170 degrees.
  7. Once they are firm (not completely froze or they will take longer to cook) pop onto a large oven tray and bake for around 15 mins or until they have a slight crack look on top.
  8. Allow to cool slightly before biting into one 😊
