Chocolate coconut cupcakes

  • 30 grams cacao powder
  • 50 grams coconut oil
  • 80 grams honey

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 160 degrees (fan forced) or 180 degrees. Line 6 hole cupcake tray.

  2. Add coconut flour and cacao powder to bowl 5 seconds/speed 5. Set aside

  3. Add honey and coconut oil to bowl. 2 minutes/37 degrees/ speed 2. 

  4. Add eggs 5 seconds/speed 6. Scrape down bowl

  5. Add combined dry ingrediants to bowl 10 seconds/speed 5 or until combined

  6. Pour mixture into 6 cupcake patties and flatten tops as they won't change shape while baking.

  7. Bake for 15mins or until set. Cool on wire rack or serve warm with vanilla icecream.

Serve warm with ice cream. Can be iced with chcocolate ganache.
