Chocolate quinoa cake with peanut butter frosting

Chocolate quinoa cake

  • 120 g butter, cut into pieces, plus extra for greasing
  • 170 g Red Quinoa
  • 520 g water
  • 4 eggs
  • 80 g full cream milk
  • 1 tsp Vanilla Bean Paste
  • 250 g caster sugar
  • 30 g cocoa powder
  • 1 1/2 tsp baking powder
  • 1 pinch sea salt

Peanut butter frosting

  • 120 g cream cheese, cut into pieces
  • 60 g Peanut Butter
  • 1 tsp Vanilla Bean Paste
  • 120 g icing sugar

Recipe's preparation

    Chocolate quinoa cake
  1. Preheat oven to 180°C. Grease and line a cake tin (22 cm) with baking paper and set aside.
  2. Place quinoa and water into mixing bowl and cook 15 min/100°C/Counter-clockwise operation/speed 1.
  3. Drain any excess liquid from quinoa, by straining through simmering bakset. Transfer quinoa from simmering basket into a bowl and set aside to cool. Clean and dry mixing bowl.
  4. Place butter into mixing bowl and melt 2 min/60°C/speed 1.
  5. Add eggs, milk, vanilla bean paste, sugar, cocoa powder, baking powder and salt and mix 5 sec/speed 5.
  6. Add reserved quinoa and blend 10 sec/speed 9.
  7. Pour mixture into prepared cake tin. Bake for 40-50 minutes (180°C) or until a skewer inserted into centre of cake comes out clean.
  8. Leave to cool in tin for 5 minutes then transfer to a wire rack to cool completely. Clean and dry mixing bowl.
  9. Peanut butter frosting
  10. Place cream cheese, peanut butter and vanilla bean paste into mixing bowl and combine 10 sec/speed 4.
  11. Add icing sugar and combine 15 sec/speed 4. Spread frosting over cake and place into refrigerator to set for 10 minutes. Cut into pieces and serve.

Tip

This recipe makes a single layer cake. For a decadant dessert, double the cake ingredients and bake in 2 cake tins (22 cm) to create a layered cake (as per image). Double the frosting ingredients to frost both layers.
