Carrot & Zuchini Slice

  • 220 g brown rice flour
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp baking soda
  • 2 eggs
  • 3-4 carrots, medium
  • 1 zucchini
  • 50 g Dates pitted, Chopped
  • 90 g coconut oil
  • 80 g Honey or Rice Malt Syrup
  • 1 tsp Vanilla ex
  • 2 tbsp flax seed meal, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Gluten free Carrot & Zuchini slice
  1. Pre heat oven to 180c

    line a 13 X 9 baking pan with baking paper

    1. mix flour, baking powder, ginger, cinnamon, nutmeg & baking soda speed 4 15 sec and set aside in another bowl

    2. Add Carrot & Zucchini to the bowl and grate Speed 5 10 sec repeat until texture you prefer.

    3. Add eggs, dates, oil, honey & vanilla to Carrot & Zucchini mixture mix speed 3 20 sec.

    4. add flour mixture and mix until combined speed 3 reverse 20 seconds. scrape down sides repeat until fully mixed.

    5. spread batter into baking pan, sprinkle flaxseed meal over the top before baking - makes the bars less sticky and adds texture.

    6. Bake for 25-30 mins or until skewer comes out clean.

    Slice into squares.

    store in air tight container in fridge.
