Egg free Lemon Cake

  • 1 whole lemon cut into quarters
  • 225g Butter
  • 3 heaped tbsp Plain or vanilla Greek yogurt
  • 200g sugar
  • 300g Self Raising Flour

Recipe's preparation

  1. Preheat oven to 180C. Grease and line 20cm cake tin or muffin/cup cake papers

    2. Place lemon juice and butter into mixing bowl and mix 7 sec/speed 8.

    3. Add remaining ingredients and combine 20 sec/Counter-clockwise operation/speed 4[/b].

    4. Pour into 20cm cake tin and bake for 50-60 minutes or 15-25 mins for cup cakes[/b]

Tip

Can be made with half the quantity of sugar.
If the mixture seems dry add a bit more yogurt
