Feijoa spelt muffins

  • 100 g rolled oats
  • 125 g Butter
  • 180 g white spelt flour
  • 80-90 g Rapadura Sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 pinch salt
  • 10 medium feijoas, flesh scooped out with a spoon. Discard skin.

Recipe's preparation

  1. Preheat pven to 180 degrees (170 degrees fan forced)

    Mill oats 10 sec/speed 6. Set aside

    Melt the butter 3 mins/50 degrees/speed 2

    Add the remaining ingredients and mix for 30 secs/speed 4

    Pour into greased or lined muffin tray. Bake for 20 mins.
