Recipe's preparation
Pre heat the oven to 180 degrees
Line the muffin tray with the paper cases.
Add all the ingredients to the "Closed lid" and mix on speed 2 for 10 secs to combine.
Add the raspberries through the MC and mix on speed 2, reverse for 6 secs.
Pour the mixture into the paper cases and cook in the oven for about 15 mins.

Tip
- Use water instead of milk for a lactose free muffin
- Change the fruit for variety !!
- My photo only has one muffin - as that was the only one left !!!

Very yummy. I added some white choc chips. Also only had gluten free plain flour so I added 2tspn GF baking powder and 1/3tsp bicarbonate of soda. Worked great!

Yummy! My raspberries didnt mix that well, so gently mixed by hand. found that the flour was rather lumpy? Came out fine though. Good school lunch box treat of after dchool snack. THANKS.

Thanks for recipes - just been put on low FOD MAP diet so first time experimenting with gluten and lactose free recipes and new to my thermomix....this was a really easy recipe. I'm just finding the GF flour very different .....and can't seem to get the fluffy break apart goodness you get with normal flour not sure if there is a trick to it....or just get used to it? Cheers

Made this today. So super easy and yummy. I put it in a lamington tray though, as I think it is cleaner and it makes nice little squares which fit easily into kids lunchboxes. I also added coconut and some cocao nibs and used rapadura sugar instead of caster sugar. Everyone loved them.
