Happy Cake

  • 100g raw sugar
  • 100g Groats
  • 1 Peeled Orange (no seeds)
  • 50g unsalted butter
  • 100g Nutella
  • 85g Grapeseed Oil
  • 1 tspn cinnamon powder
  • 3 large granny smith apples
  • 200 g full cream milk
  • 3 eggs
  • 300g Self Raising Flour
  • 1 tspn Carb Soda

Recipe's preparation

    Happy Cake - My 6 children re-named this cake as it makes them all happy.
  1. 1.) In a dry thermomix bowl Grind 100g of sugar and 100g of groats.  (10 Sec, Speed 9)  Set aside.


     


    2.) Place peeled orange without seeds and pith in bowl and pulp. (4 Sec, Speed 5) Scrape sides of bowl.


     


    3.) Add 50g of butter and 100g of Nutella. Heat (100 degrees, 4 min, Speed 2)


     


    4.) Preheat oven to 180 degrees.


     


    4.) Add set aside sugar and groats and set to Speed 2 and leave while you line and grease with butter two loaf tins.  Prepare apples, peel, core and slice.  I use an apple peeler/corer/slicer gadget.


     


    5.) Add Cinnamon and Oil (MC full) with blades running on Speed 2.


     


    6.) Add two of the sliced apples, let stir a few seconds at speed 2 and turn machine off.


     


    7.) Add 200g of Milk, let stir a few seconds at speed 2 to cool the mixture down.


     


    8.) Add the 3 eggs, let stir a few seconds at speed 2 to incorporate egg.


     


    9.) Add 300g of self raising flour and 1 tspn of carb soda sprinkled over the flour. Mix (20 Sec, Speed 4)


     


    10.) Pour a quarter of mixture in each loaf tin, Place remaining apple slices in a layer across batter, then top with remaining quarter of mixture in each tin.


     


    11.) Bake for approximately 40 minutes.


     


    12.) Serve hot with fresh cream or custard.  Serve cool in school lunch boxes.  Keeps well.

Tip

Invest in an apple peeler/corer/slicer device, kids love them and makes this cake very quick to prepare.  Most of the first two apples added will not be in noticable apple lumps but will give it a lovely moist texture.

Use up scraps of nutella left in jars in your pantry with this recipe.

Reserve the apple cores and skin, and the orange skin to blend after the cake is mixed to help clean the bowl.  Feed the mash to your chickens (they will be happy too) or use on garden as compost.
