High Protein, Sugar Free Chocolate Cake

Cake Ingredients

  • 6 eggs
  • 100 grams coconut oil, liquid
  • 110 grams Coconut Flour
  • 100 grams xylitol
  • 2 teaspoons raw cacao powder
  • 2 teaspoons baking powder
  • 160 grams coconut cream

Recipe's preparation

    Method
  1. 1. Preheat oven to 180oC. Grease and line a loaf tin with baking paper.

    2. Place eggs and oil in the thermomix bowl. Whisk together for 5 seconds / speed 4.

    3. Add sifted dry ingredients. Blend together for 5 seconds / speed 5. Scrape down the sides of the bowl.

    4. Add the coconut cream. Mix for 10 seconds / speed 5.

    5. Place mixture in to the loaf tin and bake for 40-45 minutes.

     

    Note: This is not a runny cake mix. The coconut flour gives it a thick appearance, but DO NOT add more liquid. Once baked, the cake has a light, moist texture.

    This was my first attempt with cooking with Xylitol and pretty happy with the result.
