Mixture:

  • 7 Eggs, Large, Room temp. Separated
  • 75 grams Butter, Unsalted
  • 90 grams Milk
  • 80 grams sugar, Caster
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon cream of tartar
  • 150 grams flour, Low protein such as cake flour

Recipe's preparation

    Pre-heat oven to 180C
  1. Melt butter 1 min/50C/speed 1. 

    Add milk to melted butter 20 sec/speed 1.

    Add sifted flour then 10 sec/speed 5/Counter-clockwise operation

    Add egg yolks and vanilla essence to the mixture 20 sec/speed 5/Counter-clockwise operation

     

    Using a separate mixing bowl, whip egg whites with cream of tartar 3-4 mins/speed 3.5 or until firm. Add sugar and whip again for 0.30-1 min, same speed until very stiff peaks form. Fold egg whites into the flour mixture for 3 times using a spatula until it is smooth and consistent. Do not stir or beat.   

  2. Pour the mixture into muffin cups and bake at 180C for 25-30 mins.

Tip

Ensure the egg whites are whipped at room temperature, this makes aeration quicker and you get more volume out of it.
