My Almost Paleo Choc Pear Cupcakes

  • 200 grams almond meal
  • 70 grams Raw sugar or pitted dates
  • 80 grams honey
  • 150 grams Butter or coconut oil
  • 5 eggs
  • 1 heaped tablespoons baking powder
  • 2 heaped tablespoons cacao powder
  • 200 grams pears, Peeled and cored

Recipe's preparation

    Preheat oven to 180 degrees. Put patty cases into muffin tin.
  1. 1. Place pears into mixing bowl and blitz on speed 6 for 10 seconds. Set aside.

    2. Place sugar (or dates), honey and butter (or coconut oil) into mixing bowl and mix 20 sec/speed 5. Scrape down sides of bowl.

    3. Add one egg and mix 10 sec/speed 5. Scrape down sides of bowl.

    4. Add in remaining 4 eggs, baking powder and cacao powder and mix 20 sec/speed 7. Scrape down sides of bowl.

    5. Add reserved pears and almonds almond meal - mix for 20 sec/speed 6.

    6. Pour mixture into patty cases (3/4 filled) and bake for 30 minutes or until cupcakes spring back when pressed.

    7. Allow to cool for a few minutes before transferring to a wire rack to cool further.

Tip

You could substitute some of the pears with banana or apple.

I pressed a chocolate button into the top of each muffin before baking to please the kids.
