Nana’s (Now Mum’s) Welsh Cakes

  • 225 g self-raising flour
  • 110 g Butter, (softened), Mum using Margarine
  • 100 g raw sugar
  • 1 pinch salt
  • 50 g currants, Mum uses sultanas
  • 2 dashes Milk, (this will vary from time to time)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Mill the raw sugar to castor sugar - 4 sec/speed 10, remove from the bowl and set aside.
  2. Place the self raising flour and butter in to the mixing bowl and mix 10 sec/speed 5, allowing the the butter and flour to rub together to form “breadcrumbs”.
  3. Add the raw sugar, currants (or sultanas, which is what mum and myself prefer) , and mix for 10sec/speed 4Counter-clockwise operation.
  4. Add the splash of whole milk, using the dough mode, for 20 seconds, this should make a firm dough that is suitable for rolling out.
  5. Tip the dough out onto a floured surface and roll until approximately 1cm thick, using a fluted cookie cutter (5-6cm in diameter) cut the dough, re-rolling and cutting until the dough has all been used.
  6. Using a griddle iron (or heavy based frying pan) on a low heat, cook until a golden brown. Flip the Welsh cakes and allow to cook on the second side.

Tip

You can dust the Welsh cakes with caster sugar whilst hot, if you so desire, but we never did this when I was a child…. Best served warm (off the griddle) or store in an airtight container for a few days.
