Parsnip Cupcakes with Lemon Curd

Cupcakes

  • 250 grams young parsnips, peeled, trimmed and roughly chopped
  • 100 grams raw sugar
  • 1 tsp mixed spice
  • pinch salt
  • 120 grams Butter, roughly chopped
  • 1 tsp vanilla
  • 2 eggs
  • 200 grams SR flour

  • 240 grams sugar
  • lemon peel of 2 organic lemons
  • 120 grams Butter, cut into pieces
  • 3 x 60 gram eggs
  • 150 grams lemon juice, freshly squeezed of 3-5 organic lemons

Recipe's preparation

  1. Heat oven to 180C degrees.

    Chop parsnips 5 secs/sp 7. Add other ingredients. Mix 6 secs/sp 6.

    Check mixture. If a little more mixing is needed, scrape down bowl and mix a little more.

    Spoon into cupcake moulds and bake for 20 minutes. Test to see if cooked as they may need a little longer depending on the size of the moulds.

    Inspired by a Martha Stewart recipe.

    Cool on wire rack. When cool, top with lemon curd. I used the Lemon Curd recipe from 'My Way of Cooking' p208.

  3. Place sugar into mixing bowl, pulverise 15 sec/speed 10.

    Add lemon peel, pulverise 20 sec/speec 10.

    Add butter, eggs and lemon juice, heat 20 min/90degrees/speed 2 without measuring cup.

    Insert measuring cup and mix 25 sec/speec 6.

    Pour into 2 hot rinsed jam jars with twist-off lids and close immediately. Cool completely before storing in fridge.

Tip

Make the lemon curd earlier so it has time to be cooled and refrigerated.

Young fresh parsnips are softer, contain more liquid therefore chop more finely. They also don't have the 'parsnip' taste that older ones do. Great for hiding veg.

I also sprinkle a little milled dried orange zest.
