Pear and Yoghurt Muffins
- 2 --- pears, peeled, cored, quartered
- 125 grams unsalted butter
- 250 grams natural yoghurt
- 2 --- eggs
- 150 grams caster sugar
- 1 level teaspoon vanilla essence
- 300 grams plain flour
- 2 teaspoon baking powder
- 1/2 teaspoon bicarb soda
- 1 pinch ground ginger

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven 180c and prepare muffin trays
- Add pears and chop 3 seconds speed 4 then set aside
- Add butter and melt 3min 60 degrees speed 1
- Add eggs, caster sugar, vanilla and yoghurt then whisk 10 seconds speed 4
- Add flour, bicarb, baking soda and ginger then mix 8 seconds speed 4
- Scrape sides of bowl then add chopped pear and mix reverse 5 seconds speed 4
- Spoon into prepared muffin trays and bake for 10-15 min

These muffins are great. I used probiotic milk too to make them extra healthy and reduced sugar to 100g, will try reducing even further next time. As sweet treats go this is a pretty healthy option and could be even more so with chia seeds etc. next time I’ll add poppy seeds and they’ll still comply with failsafe diet. Thanks!

These are amazing! I followed the recipe exactly using unsweetened natural yogurt, but I did have to cook a little longer than suggested, but that could be just my oven, so it's just best to check with skewer to see when they are done. Thank you so much

Really nice muffins, nice texture and moist - I had 4 smallish pears that needed using and put all of these in, used Greek yoghurt,” reduced the sugar to 100g, and added 1/2 a teaspoon of cinnamon. I made half of the mix as mini muffins which are perfect for the kids. Nice flavour, sweet enough but not too sweet.

Absolutely delicious ... I had some pears that needed to be used today, and some homemade vanilla yoghurt .. Used both up and the kids love them ! I did use a 12 cup muffin pan, so made 12 regular size and extended cooking time. This recipe is a winner !
