Pineapple, Banana & Quinoa Cake

Ingredients

Cake Batter

  • 260 g quinoa flour, milled grain 1 min speed 9
  • 200 g Dextrose sugar
  • 1 tsp ground cinnamon
  • 90 g Pecans or walnuts
  • 450 g fresh pineapple, cubed
  • 3 medium bananas, ripe
  • 3 eggs
  • 160 g grape seed or rice bran oil
  • 1 tsp vanilla extract

Frosting

  • 50 g soft cream cheese
  • 50 g soft unsalted butter
  • 1 tsp vanilla extract
  • 260 g Dextrose sugar

Recipe's preparation

    cake batter
  1. Pre heat oven to 175oC Line & grease a 23 cm square cake tin.

    Mill Quinoa to flour 1 min speed 9, Add Sugar & Cinnamon & mix on speed 5 for10 sec to combine.  Set aside.

    Add Nuts to the TM bowl and turbo 4 or 5 times, add to dry ingredients.

    Place Pineapple & Bananas into TM bowl and process 5 sec speed 5, add all wet ingredients and process for a further 20 sec speed 5.

    Add all Dry ingredients to the TM bowl and combine, 5 sec speed 5, on reverse, scraping down the sides and repeating if necessary.

    Pour into prepared tin and bake for 1 – 1¼ hours, until a skewer comes out clean, note this is a very moist cake.

  2. Frosting
  3. Add all frosting ingredients to the TM bowl and mix on speed 6 for 30 seconds.

    Let the cake completely cool before adding the frosting. Decorate with extra nuts if desired.
