- 80g Demerara sugar
- 80g Granulated sugar
- 170g unsalted butter
- 30g yoghurt
- 4 large eggs
- 180g plain flour
- 50g ground almonds
- 1.5 tsp baking powder
- 0.5 tsp bicarbonate of soda
- Pinch of salt
- 1 tbsp mixed spice
Topping
- 60g slightly salted butter
- 45g Demerara sugar
- 1.5 tbsp golden syrup
- 90g oats
- 1 small eating apple

Recipe's preparation
Blitz the sugars 2 sec/speed 10.
Add remaining cake ingredients and mix 50 sec/speed 5.
Scrape down the sides of the bowl and mix again 10 sec/speed 5.
Pour into a greased and lined 20cm round tin.
Place ingredients except apple in the TM bowl and mix 2 min/100C/"Counter-clockwise operation" speed 1.
Core and cut the apple to 1cm cubes and incorporate into the flapjack mixture with the spatula.
Gently scatter the apple flapjack mixture over the cake batter and bake at 170C for 45 minutes, or until a skewer comes out clean.

Tip
Don't just be limited by apples - any stonefruit or even berries would work just as well!
To dress it up more for a special occasion, brush a light glaze of apricot jam and water over the cake and sprinkle on some extra mixed spice and some toasted flaked almonds.
