  • 150 grams dates, pitted
  • 125 grams water
  • 1 teaspoon Bi Carb Soda
  • 150 grams Butter
  • 150 grams brown sugar
  • 2 eggs
  • 1 teaspoon vanilla essence

Recipe's preparation

    Sticky Date Cake
  1. 1. Preheat oven to 180'C. Lightly grease a 28cm x 18cm cake tin.

    2. Put dates into the TM bowl and chop for 5 seconds on speed 7. Add water and heat on 80, speed stir, reverse for 3 minutes. Add bicarbonate of soda and stir through. The mixture will fizz. Set aside to cool. Do not clean bowl!

    3. Place butter and sugar in TM bowl speed 4, 30 seconds.

    4. Add eggs and vanilla essence and mix speed 4, 15 seconds.

    5. Add the flour and and mix speed 4, 15 seconds, add the date mixture mix speed 4, reverse, 15 seconds.

    6. Pour mixture into the tin and cook for 25-30 minutes.

Tip

The original recipe suggested to top the cake, when cooked and cooled, with caramel toffee sauce (Dulce de Leche).

This cake freezes well.

If you prefer chop the dates for less time.

    Yum!! Made this last night for hubby's birthday, he was a big fan!! Everyone loved it! None left at all!

    I ran out of time to make the optional topping so I just bought a can of Nestle Caramel Sauce for people to serve on their piece if desired, also served with dollop cream - yum!

    I used wholemeal spelt flour and was great!

    Will definitely be making again! Delicious! Quick and easy and the kids helped tmrc_emoticons.) We took it to the park for after our BBQ dinner tmrc_emoticons.) Thank you!!

    This is super yummy!  I didn't have wholemeal so used white SR flour.  I cut into slices then froze individually for lunches - well what was left as it was hard to stop eating it when it was warm tmrc_emoticons.)
